Turkey Sweet Potato Skillet

Ingredients
  

  • 1 lb ground turkey 93% lean recommended
  • 2 medium sweet potatoes peeled and diced into 1/2-inch cubes
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 cup spinach fresh, roughly chopped
  • 1 tsp paprika
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 2 tbsp olive oil
  • 1/4 cup chicken broth low-sodium

Equipment

  • Large skillet (preferably cast iron)
  • Spatula
  • Cutting board and knife

Method
 

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground turkey, breaking it apart with a spatula. Cook until browned, about 5-7 minutes. Remove the turkey from the skillet and set aside.
  2. In the same skillet, add the remaining olive oil. Add the diced onion and cook until translucent, about 3-4 minutes. Add the garlic and cook for another minute until fragrant.
  3. Add the sweet potatoes and red bell pepper to the skillet. Season with paprika, cumin, chili powder, salt, and pepper. Stir to combine and cook for about 10 minutes, stirring occasionally, until the sweet potatoes are tender.
  4. Return the cooked turkey to the skillet. Add the chicken broth and spinach, stirring until the spinach wilts, about 2 minutes. Adjust seasoning if necessary.
  5. Serve hot, garnished with fresh herbs if desired.

Notes
