Turkey Taco Stuffed Sweet Potatoes

Ingredients
  

  • 4 medium sweet potatoes Choose ones of similar size for even cooking
  • 1 tablespoon olive oil
  • 1 pound ground turkey Lean preferred
  • 1 packet taco seasoning Or homemade mix
  • 1/2 cup water
  • 1 cup shredded cheese Cheddar or Mexican blend
  • 1/2 cup salsa Your favorite variety
  • 1/4 cup sour cream Optional
  • 1/4 cup chopped fresh cilantro For garnish
  • 1 avocado sliced For topping

Method
 

  1. Preheat your oven to 400°F (200°C). Wash the sweet potatoes, pierce them several times with a fork, and place them on a baking sheet. Bake for 10-15 minutes or until tender when pierced with a fork.
  2. While the sweet potatoes are baking, heat the olive oil in a large skillet over medium heat. Add the ground turkey and cook, breaking it up with a spatula, until browned and cooked through, about 5-7 minutes.
  3. Stir in the taco seasoning and water. Simmer for 2-3 minutes until the mixture thickens slightly.
  4. Once the sweet potatoes are done, cut them open lengthwise and fluff the insides with a fork. Spoon the turkey taco mixture into each sweet potato.
  5. Top each stuffed sweet potato with shredded cheese, salsa, a dollop of sour cream if using, sliced avocado, and a sprinkle of fresh cilantro. Serve immediately.

Notes

Chef's Tips:
• For a crispier sweet potato skin, you can broil them for the last 2-3 minutes of baking
• Avoid overcooking the sweet potatoes to prevent them from becoming too soft and difficult to stuff
• Serve with a side salad for a complete meal
