Method
- Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal. This is non-negotiable for clean cuts.
- In a large bowl, whisk together the melted (and cooled) butter and sugar for a full minute until well combined and slightly glossy. Whisk in the eggs, one at a time, beating vigorously after each until the mixture is smooth and slightly thickened. Stir in the vanilla extract.
- Sift the cocoa powder, almond flour, salt, and baking powder directly into the wet ingredients. This prevents lumps. Use a spatula to fold the dry ingredients into the wet until just combined and no dry streaks remain. The batter will be very thick. Fold in the chocolate chips.
- Spread the thick batter evenly into your prepared pan. It will be sticky; a small offset spatula or the back of a spoon lightly wet with water helps immensely. Bake for 22-25 minutes. The top should be set and have a beautiful crackly sheen. A toothpick inserted into the center will come out with a few moist crumbs, not clean.
- Let the brownies cool completely in the pan on a wire rack. This is the hardest but most crucial step—it allows them to set into that perfect fudgy texture. Use the parchment paper to lift them out, then slice into 9 squares with a sharp knife wiped clean between cuts.
Notes
Chef's Tips:
• For super clean cuts, chill the cooled brownies in the pan for 20 minutes before slicing.
• Do not overmix the batter once the dry ingredients are added to avoid a cakey texture.
• Serve slightly warmed with a scoop of vanilla ice cream for the ultimate treat.
Food Safety:
• Ensure eggs are at room temperature to emulsify properly with the butter.
• Store cooled brownies in an airtight container at room temperature for up to 3 days.
