  • 2 large eggs at room temperature
  • 2 tsp pure vanilla extract
  • 2 cups grated zucchini about 1 medium zucchini, unpeeled, lightly packed
  • 1 cup semi-sweet chocolate chips plus more for topping

Method
 

  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch metal baking pan and line it with parchment paper, leaving an overhang on two sides for easy removal. This is my non-negotiable step for perfect, clean-cut brownies.
  2. In a medium bowl, whisk together the flour, sifted cocoa powder, baking soda, and salt. Sifting the cocoa is crucial—it prevents lumps and ensures a smooth, fudgy texture. Set this dry mixture aside.
  3. In a large mixing bowl, combine the sugar, oil, eggs, and vanilla. Whisk vigorously for about 60 seconds until the mixture is smooth, slightly thickened, and well-emulsified. This step builds structure.
  4. Add the dry ingredients to the wet ingredients. Use a spatula to fold gently until just combined—a few streaks of flour are okay. Then, fold in the grated zucchini and 1 cup of chocolate chips. The batter will be very thick, which is perfect.
  5. Spread the thick batter evenly into your prepared pan. It will seem scant, but trust me, it rises beautifully. Sprinkle the top with a few extra chocolate chips. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs attached, not wet batter.
  6. Let the brownies cool completely in the pan on a wire rack. This is the hardest part, but it's essential for setting the fudgy texture. Use the parchment overhang to lift them out before cutting into squares with a sharp knife.
