  • 1 cup wild rice rinsed
  • 2 tbsp olive oil
  • 1 large onion diced
  • 3 cloves garlic minced
  • 1 lb mushrooms sliced (cremini or button)
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 6 cups vegetable broth
  • 1 cup coconut milk full-fat
  • 2 tbsp soy sauce or tamari for gluten-free
  • 1 tbsp nutritional yeast optional, for added flavor
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the sliced mushrooms, diced carrots, and celery. Cook for about 5-7 minutes until the vegetables begin to soften.
  4. Add the dried thyme and rosemary, stirring to coat the vegetables with the herbs.
  5. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer.
  6. Add the rinsed wild rice to the pot. Cover and simmer for about 40 minutes, or until the rice is tender.
  7. Stir in the coconut milk, soy sauce, and nutritional yeast. Let the soup simmer for an additional 5 minutes to allow the flavors to meld.
  8. Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
