Walking Taco Casserole

Ingredients
  

  • 1 pound ground beef 80/20 lean-to-fat ratio works best
  • 1 packet taco seasoning Adjust to taste
  • 1 can black beans 15 ounces, rinsed and drained
  • 1 can corn 15 ounces, drained
  • 1 can diced tomatoes 14.5 ounces, with juices
  • 1 bag tortilla chips 10 ounces, slightly crushed
  • 2 cups shredded cheddar cheese Divided
  • 1/2 cup sour cream For serving
  • 1/4 cup sliced green onions For garnish
  • 1/4 cup sliced black olives For garnish

Method
 

  1. Preheat your oven to 350°F (175°C). In a large skillet over medium-high heat, cook the ground beef until browned, about 8-10 minutes, breaking it into small pieces as it cooks.
  2. Drain excess fat from the skillet. Stir in the taco seasoning, black beans, corn, and diced tomatoes. Simmer for 5 minutes, allowing the flavors to meld together.
  3. In a 9x13-inch baking dish, spread half of the crushed tortilla chips in an even layer. Pour the beef mixture over the chips, then top with half of the shredded cheese.
  4. Add the remaining tortilla chips on top of the beef mixture, followed by the rest of the cheese. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  5. Remove from the oven and let it cool for 5 minutes before serving. Garnish with sour cream, green onions, and black olives.
