- Preheat your oven to 475°F (245°C). If you have a pizza stone, place it in the oven to heat up. If not, use a baking sheet.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced mushrooms and sauté until they release their moisture and start to brown, about 5-7 minutes. Add the minced garlic and cook for another minute. Season with salt and pepper to taste.
- Roll out the pizza dough on a lightly floured surface to your desired thickness. Transfer it to a piece of parchment paper if using a pizza stone, or directly onto a greased baking sheet.
- Brush the remaining tablespoon of olive oil over the dough. Spread the ricotta cheese evenly over the dough, leaving a small border for the crust. Sprinkle the mozzarella and Parmesan cheeses over the ricotta.
- Distribute the sautéed mushrooms evenly over the cheese. Sprinkle with dried oregano and red pepper flakes if using.
- Carefully transfer the pizza to the preheated pizza stone or baking sheet in the oven. Bake for 12-15 minutes, or until the crust is golden and the cheese is melted and bubbly.
- Remove the pizza from the oven and let it cool for a few minutes. Garnish with fresh parsley, slice, and serve.
