- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- In a small bowl, mix together the olive oil, minced garlic, lemon zest, lemon juice, chopped parsley, dried oregano, salt, and black pepper to create the marinade.
- Place the salmon fillets on the prepared baking sheet. Brush the marinade generously over the top and sides of each fillet.
- Bake the salmon in the preheated oven for 12-15 minutes, or until the internal temperature reaches 145°F (63°C) and the fish flakes easily with a fork.
- Remove the salmon from the oven and let it rest for a few minutes before serving. Garnish with additional fresh parsley and lemon slices if desired.
