  • 1/4 cup sweet chili sauce
  • 1 tablespoon Sriracha sauce or to taste
  • 1 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 4 brioche buns toasted
  • 1 cup panko breadcrumbs
  • 1/2 cup all-purpose flour
  • 2 eggs beaten
  • 1/4 cup vegetable oil for frying

Method
 

  1. Prepare the Bang Bang Sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, and Sriracha sauce. Set aside.
  2. Make the Slaw: In a medium bowl, combine the shredded cabbage and carrots. In a separate small bowl, whisk together the apple cider vinegar and honey. Pour over the cabbage mixture and toss to coat. Let it sit for at least 10 minutes to marinate.
  3. Bread the Shrimp: Set up a breading station with three shallow dishes. Place the flour in the first dish, beaten eggs in the second, and panko breadcrumbs in the third. Dredge each shrimp in the flour, dip in the egg, and then coat with the panko breadcrumbs.
  4. Fry the Shrimp: Heat the vegetable oil in a large skillet over medium heat. Once hot, fry the breaded shrimp in batches until golden brown and crispy, about 2-3 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.
  5. Assemble the Sandwiches: Spread a generous amount of Bang Bang Sauce on the bottom half of each toasted brioche bun. Place a portion of the slaw on top, followed by the fried shrimp. Add more sauce if desired, and top with the other half of the bun. Serve immediately.
