- In a large bowl, combine the flour, salt, yeast, cinnamon, and sugar. Mix well to ensure even distribution of the dry ingredients.
- Add the water and raisins to the dry mixture. Stir until a sticky dough forms. Cover the bowl with plastic wrap and let it rest at room temperature for 12-18 hours.
- After the resting period, preheat your oven to 450°F (230°C) and place a Dutch oven with the lid on inside to heat up.
- While the oven is heating, turn the dough out onto a floured surface and shape it into a ball. Let it rest for about 30 minutes.
- Carefully remove the hot Dutch oven from the oven, place the dough inside, and cover with the lid. Bake for 30 minutes, then remove the lid and bake for an additional 15 minutes until the bread is golden brown.
