Ingredients
  

  • 1 pound dried black-eyed peas rinsed and sorted
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth low-sodium
  • 1 14.5-ounce can diced tomatoes with juices
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper optional, for heat
  • Salt and black pepper to taste
  • Fresh parsley for garnish optional

Method
 

  1. Rinse the black-eyed peas under cold water and sort through them to remove any debris. Place the peas in the slow cooker.
  2. Add the chopped onion, diced green bell pepper, and minced garlic to the slow cooker. Pour in the vegetable broth and diced tomatoes with their juices.
  3. Stir in the smoked paprika, dried thyme, bay leaf, and cayenne pepper if using. Season with salt and black pepper to taste.
  4. Cover the slow cooker and cook on low for 6 hours or until the peas are tender and the flavors have melded together.
  5. Once cooked, remove the bay leaf and taste for seasoning, adjusting if necessary. Serve hot, garnished with fresh parsley if desired.

Notes

• For a meatier version, add smoked ham hock or bacon to the slow cooker at the beginning of cooking.
