  • 1/2 cup creamy almond butter or any nut/seed butter like peanut or sunflower seed butter
  • 1/2 cup pure maple syrup or honey; adds moisture and natural sweetness
  • 2 large eggs at room temperature
  • 1 tsp pure vanilla extract
  • 1/2 cup chocolate protein powder whey-casein blend or plant-based; see notes
  • 1/4 cup unsweetened cocoa powder Dutch-process or natural
  • 1/4 tsp fine sea salt
  • 1/2 tsp baking soda
  • 1/3 cup dark chocolate chips plus extra for topping

Method
 

  1. Preheat your oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal. Lightly grease any exposed pan.
  2. In a medium microwave-safe bowl, combine the almond butter and maple syrup. Heat in 20-second bursts, stirring between each, until the mixture is warm, fluid, and easily stirrable—about 40-60 seconds total. This step is crucial for a smooth batter. Let it cool for 2 minutes.
  3. To the warm almond butter mixture, whisk in the eggs and vanilla extract until completely smooth and emulsified. The mixture should be glossy.
  4. In a separate bowl, sift together the protein powder, cocoa powder, salt, and baking soda. This prevents lumps. Add the dry ingredients to the wet ingredients and fold gently with a spatula until just combined and no dry streaks remain. The batter will be thick. Fold in the chocolate chips.
  5. Transfer the batter to your prepared pan. Use the spatula to spread it into an even layer. Sprinkle a few extra chocolate chips on top, if desired. Bake for 20-25 minutes. The key is to pull them out when the center is just set but still looks slightly underdone—a toothpick inserted will have moist crumbs, not wet batter.
