Ingredients
  

  • 4 salmon fillets about 6 oz each
  • 2 tbsp whole grain mustard
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • 1 tsp lemon zest
  • 1/2 tsp dried thyme
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 lemon lemon cut into wedges for serving
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  2. In a small bowl, mix together the whole grain mustard, Dijon mustard, honey, olive oil, minced garlic, lemon zest, dried thyme, salt, and black pepper to create the mustard crust.
  3. Place the salmon fillets on the prepared baking sheet, skin side down. Spread the mustard mixture evenly over the top of each fillet.
  4. Bake the salmon in the preheated oven for 12-15 minutes, or until the salmon flakes easily with a fork and the internal temperature reaches 145°F (63°C).
  5. Remove the salmon from the oven and let it rest for a few minutes before serving. Garnish with fresh parsley and serve with lemon wedges on the side.
